Chicken Tikka Pizza

A classic if you’re from Pakistan, and quite possibly offensive if you’re Italian. Chicken tikka pizza is something that you can order from just about any small cafe located in markets around Pakistan. Even chains like Dominos and Pizza Hut have adapted to the local flavors and added this to their menu. But one thing is for sure, those local pizza spots know what they’re doing.

A soft chewy dough with a crispy crust, topped with spicy tomato sauce, studded with succulent cubes of chicken tikka, bell peppers and onions, topped with an insane amount of cheese only to be baked and sprinkled with even more spicy chili flakes and downed with a ice cold coke. That my friends, is what you should expect when you hear chicken tikka pizza, and I will not disappoint you.

Here’s what you’ll need for 1 medium/large sized pizza

1/2 recipe pizza dough

1 chicken breast fillet, chopped into tiny cubes

1 Tblspn Shan Tikka Masala (you can also use my tikka recipe)

1/4 tsp garam masala

1 tsp heavy cream

1 bell pepper, diced

1/2 onion, diced

3 Tblspn oil

4 Tblspn tomato sauce+1/4 tsp chilli powder

2 1/2 cups shredded mozzarella

Start off by making the pizza dough and setting it aside, covered, till it doubles in size. That can take anywhere from 1-2 hours, time you can use to prep the rest of the ingredients.

In a small bowl mix the chopped chicken with the tikka masala, garam masala and cream. You can also use my chicken tikka recipe if you’re in the mood, but I use Shan Tikka Masala to speed things along.

Saute the chicken with half of the chopped onions and peppers till everything is cooked. Set aside.

Once the dough has risen, flip it out of the bowl onto a lightly floured surface, knead it for a couple minutes, then roll it out to the size of your pan (the dough should be 1/2 an inch high once rolled out. It rises while it’s baking). I prefer using my trusted rectangle baking trays, but a circle pizza pan would be perfect too. Here’s a step you don’t want to skip. Pour the 3 Tblspn of oil into the baking tray and spread it around edge to edge. Then place the dough in the tray and make sure it’s also spread edge to edge. The oil will lightly fry the dough while it cooks in the oven, and oh my word it’s delicious!

Then spread over the tomato sauce spiked with chili powder. If you’re making this for kids you can skip the chili powder. Spread out the cooked chicken, onions and pepper mix. Then sprinkle over the raw peppers and onions, then finally the cheese. I brush the crust with some oil so it gets crispy as well.

Bake for 15-20 minutes at 400 F, or till the cheese starts turning golden brown and the crust has cooked through. The smaller the pizza, the quicker it’ll cook.
