Once you have a good pizza dough recipe dough, like my pizza dough, the possibilities are endless. You an essentially make any pizza by changing the toppings. I have a chicken tikka pizza recipe up, and that’s a family favorite for sure, but my love for Pakistan’s Pizza Hut has me longing for Chicken Fajita Pizza as well, so I made it today. It’s such a simple recipe you can literally have everything ready before the pizza dough fully rises.
Here’s what you’ll need for 2 medium sized Fajita pizzas:
1 batch of Pizza Dough
1/2 pound boneless chicken, cut into small pieces
1 green bell pepper, thinly sliced
1 red/yellow bell pepper, thinly sliced
1/2 onion, thinly sliced
1 Tblspn taco seasoning
1/3 tsp salt
1/3 tsp black pepper
1/4 tsp smoked paprika
1/3 cup pizza sauce /tomato sauce
3 cups shredded mozarella (or more)
Preheat your oven to 400 F.
Start off by preparing the pizza dough. While it rises you can get the chicken ready. Sauté the chicken and peppers in 3 Tblspn oil in a non stick pan. cook for about 2 minutes, then add the seasoning. Sauté on a medium flame, and if the peppers start to burn just add a splash of water. Cook till the chicken and peppers have slightly caramelized, then set aside.
To assemble the pizza, divide the dough into two portions and roll out into a circle about 1/3 inch thick. Then divide the sauce between the two pizzas. add as much chicken and peppers as you like, then top off with cheese. Again with the cheese, add as much or as little as you like. Then bake for about 15-20 minutes, or until the dough and cheese turn a light golden brown.
